Chinese chicken curry recipe

Sometimes you need to prepare something special or just different to spice things up with your partner or even on an occasion where you are having friends coming over. But the time you have to prepare is limited and your willingness to waste it on cooking is very low. So you are looking for a quick and easy recipe that will make you seem like a master chef! Here’s a simple and delicious recipe for easy chinese chicken curry that you should definitely try.

Ingredients:

  • 4-6 boneless, skinless chicken breasts, cut into bite-sized pieces (ideally)
  • 1 red bell pepper and 1 green (or any color you have in hand) sliced
  • 1 onion, chopped and 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) chickpeas (optional), drained and rinsed
  • 1 can (14 oz) coconut milk
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 2 tbsp curry powder
  • 1 tsp ground ginger and ground cumin
  • Salt and pepper, to taste
  • Cooked rice, for serving

1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

2. Add the onion, garlic, and peppers to the skillet. Cook until the vegetables are tender, about 5-7 minutes.

3. Add the curry powder, ginger, and cumin to the skillet. Cook for 1-2 minutes, stirring constantly, until fragrant.

4. Add the diced tomatoes, chickpeas, coconut milk, soy sauce, salt, and pepper to the skillet. Stir to combine.

5. Add the cooked chicken back to the skillet. Bring the curry to a simmer and cook for 10-15 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly. You can add some cassius if you like.

6. Serve the curry over cooked rice.

Note: You can adjust the spiciness of the curry by adding more or less curry powder, or by adding a pinch of cayenne pepper or red pepper flakes.
